Mix together 1 spoonful honey, 2 spoonfuls soy sauce, 4 spoonfuls olive oil (I used dessert spoons). Take at least one whole fresh mackerel per person and make three or four diagonal cuts in each side. Marianate mackerel in mixture for at least 30 minutes. Cook mackerel in marianade in preheated pan (approx 5 minutes on each side). Serve with baby leaf spinach and sun-dried tomatoes (and white wine).
